you should know that while this recipe sounds healthy, it's name is the only thing healthy about it. it is pretty much a combination of cheese, cheese and more cheese but it comes together to make a fabulous appetizer. when my daughter was two, we had a dinner party and put the leftovers in the kitchen. after a while we noticed she was missing and found her sitting on the counter with a spoon and the dip...going to town! it really is that good and it's easy to make ahead and heat up the day you'll need it. i usually serve it with crackers, pitas or crusty french bread cut into chunks (my personal favorite). enjoy!
spinach-artichoke dip
1/2 cup shredded mozzerella cheese
1/2 cup sour cream
1/2 cup mayonaise
8 oz. softened cream cheese
1/2 cup grated Parmesan cheese
2 teaspoons Dijon mustard
1/4 teaspoon pepper
1 14 oz can artichoke hearts, chopped
1 cup chopped spinich leaves
1/2 cup chopped red onion
1/4 cup grated Parmesan (for topping)
mix the above ingredients in a large bowl. transfer to an oven safe baking dish. Sprinkle with extra Parmesan. bake at 350 for 30 minutes (45 if refrigerated). Serve with your favorite bread or crackers.
note: for big parties, i double this recipe.
